The meat science degree option offered through the food science major helps students develop a fundamental understanding of the composition of carcasses and retail meats. Meat science primarily deals with assessing the different characteristics of fresh meats, as well as some food safety.

The meat science option trains students to enter all aspects of the meat industry, including animal harvesting, fabrication, processed meats, food mircobiology, and product development.
